History and concept
Opened in 2013 by restaurateur Elias Pope, HG Sply Co. arrived when Lower Greenville was reinventing itself, and became one of the anchors of that transformation. The concept grew into the UNCO hospitality group alongside sister spots like Hero by HG and Standard Service, but the original still defines the formula: ingredient-driven comfort food with a nutritional conscience, down to a macros program for guests who track their plates.
