HG Sply Co. pulled off a trick most health-minded kitchens never manage: it made whole-food cooking genuinely craveable, then put a rooftop bar on top of it. Grass-fed proteins, build-your-own bowls and a motto — indulge wisely — that the kitchen and the bar interpret with equal enthusiasm.

History and concept

Opened in 2013 by restaurateur Elias Pope, HG Sply Co. arrived when Lower Greenville was reinventing itself, and became one of the anchors of that transformation. The concept grew into the UNCO hospitality group alongside sister spots like Hero by HG and Standard Service, but the original still defines the formula: ingredient-driven comfort food with a nutritional conscience, down to a macros program for guests who track their plates.

What to order

The build-your-own bowl is the signature move — pick a base like quinoa, chickpeas or roasted cauliflower, add a protein from seared tuna to steak or duck confit, then finish with broccoli, wild mushrooms or guacamole. Grilled meats and hearty brunch plates round out the menu, and the drink list runs from craft cocktails to fresh-pressed juices for the morning-after crowd. The space

Downstairs is warm, woody and casual; upstairs is the point: a sprawling rooftop above the Lower Greenville bustle with its own menu and bar, equally suited to a late brunch in the sun or cocktails after dark. Few Dallas patios convert daytime to nighttime so smoothly.
