Yardbird’s kitchen commits to its signature bird before you have even thought about dinner: the chicken spends 27 hours in a brine built from the founder’s grandmother’s recipe, then hits the fryer to emerge shatter-crisp and improbably juicy. Around that centerpiece orbits a full Southern repertoire and one of the deepest bourbon collections in Dallas.
History and concept
Founder John Kunkel launched Yardbird in Miami as a love letter to his grandmother’s Southern table, and the brand grew into an international name without losing its farm-fresh ethos. The Dallas outpost landed in the Park District development near Klyde Warren Park, giving Uptown a Southern kitchen with big-city bones.
What to order
The essential order is chicken ‘n’ watermelon ‘n’ waffles — the improbable trio that became the house icon. The fried green tomato BLT stacks house-smoked pork belly, pimento cheese, frisée and smoky tomato jam into the best sandwich argument in the neighborhood, and the flaky biscuits deserve their own course. Bourbon is the house spirit: flights, rare pours and whiskey-forward cocktails all get serious attention.
The space
Designed by the Rockwell Group, the room is open-plan and industrial at heart but softened with Southern charm — most memorably on the wraparound patio, where wooden latticework frames actual swing seating. It is airy at lunch, glowing and lively at night.
